Beth Ann's Day Off

I'm in an excellent mood today even though the D/FW skyline is gray.  I'm playing hooky today.  Not from work, but from working out.  That rarely happens without a very good reason.  It was actually an accident.  I took the Skittle in today for routine maintenance so BFF picked me up and brought me to work.  She will drop me back after.  So, no CrossFit or Jazzercise.  I thought I had lunch plans so I didn't bring clothes to work out at lunch, but it turns out that they are actually on Thursday.  I started to feel guilty, but then I realized that was silly.  I have a free day!  Woohoo!! 

I think BFF & I are going to Boston's for lunch today.  I will need to check out the menu and figure out what I'm going to eat so I don't do a mid-week sabotage.  Those are only allowed on the weekends.  Ha! 

It's weird because I don't have anything to say.  That surely doesn't seem right.  I do have a question though...I'm looking for new food ideas for things I can make on the weekend and reheat throughout the week.  Gluten free would be a bonus.  What are your favorite meals?

IDK about meals, I just had quinoa and veggie sauteed in soy and chili paste and it was AAAAAMAZING.

But I did find a desert recipe thingy the other day, or it could be a snack, and made it. Chopped up frozen banana, 3 T cocoa powder, and a little milk.....use a food processor or blender, and blend up! It's like soft serve frozen yogurt!!! To.Die.For.

Sometime I like to get a rotisserie chicken from Costco and portion it out into containers for the week. Probably way too much for one person though. I also do a box of cous cous with added veggies and portion that out.

My healthified shepherd's pie (with the faux-tato cauliflower topping) is even BETTER reheated. I always make too much of that on purpose to make sure I have leftovers. Spaghetti squash with Italian turkey sausage and tomato sauce is also great leftover.

A day off from working out is a good thing. You are sooooooo dedicated you deserve to let those muscles rest.

Marinated Flank steak and grilled veggies.

Oh...Hungry Girl's recipe for "Faux Fried Chicken" I make some chicken tenders.

I also make chicken or crab salad to keep in the fridge most days. Canned chicken w/ mayo and seasoning or even sub in greek yogurt.
