As the Debster pointed out, it is actually 8 Days to Vegas...not a week. No use to wait until tomorrow! So, here I go. As of this morning, I am 9 pounds up from my very lowest (which I know wasn't real and was probably some dehydration...blah, blah, blah), but I'm ready to get back to it. I want to lose some of that so I can enjoy Vegas and Long Beach with no guilt.
I'm sad that Jillian (my BodyBugg) is missing, but I'm sure she will turn up soon. I really want to find her by the time my July Fitness Extravaganza starts. In the meantime, I know approximately how many calories I burn in a day with/without exercise, so I will track calories consumed and that should keep me honest.
What is your favorite single serving quick, health-conscious, band-friendly, single serving dinner? I'm good at big dinners that feed me for days, but I'm looking for some quick and delicious things I can make for myself the next few days without having a bunch of leftovers.
BFF & I are going to see Billy Elliot tonight. It looks great!

Last night I grilled up 2 chicken tenders (marinated in KC Masterpiece Garlic & Herb sauce) and cut up a small squash and boiled it for a few minutes to get it tender. I put some grated mozzarella cheese on top for a little kick. Best of all the whole thing was a whopping 210 calories. Can't beat that!
I like to put tilapia in a foil pouch and toss it on the grill for about 10 mins. Add a bit of Olive Oil and some Salt & Pepper - delish. I also tossed a zucchini sliced lengthwise on with my fish - whole dinner prepared in less than 15 mins and was absolutely divine.
I am so excited for your vegas trip! You really meant it when you said summer of fun huh?
I am known to do a quesadilla for a one-off meal. One medium low-carb whole wheat tortilla with a protein (either shrimp or chicken), possibly onions and mushrooms, about a 1/4 cup of shredded cheese and jalapenos. Put the ingredients on one side, fold in half, and heat it in a skillet. If my band is working extra hard, half is enough, but sometimes I can and do eat the whole thing.
Tonight we have leftover pulled pork, so I'll be doing my barbecue pork quesadilla instead :)
I keep individually wrapped fish filets in the the freezer. I'll wrap one in foil with some seasoning and lemon slices if I have them and a dab of butter, seal it up, and bake it for 20-30 minutes. I also keep veggie burgers handy. I'm pretty boring - if I am cooking for just me, dinner is more often than not a can of soup or a Lean Cuisine or Amy's Organic meal. Lunch is my big meal of the day because I'm much tighter at dinner time. Tonight I had some leftover turkey taco meat on a low carb tortilla with cheese and hot sauce, and I shared a mango with the parrots for dessert.
